Spray 8 by 8 pan with cooking oil.
Preheat oven to 325 degrees.
In a medium pan over low heat, combine, stirring often, until melted, about two minutes:
6 T salted butter, cut into pieces
4 ounces bittersweet chocolate (I used half semi sweet, half unsweetened Baker's Chocolate) or chocolate chips
Remove from heat and stir in:
1 cup sugar
1/4 t salt
1/3 cup unsweetened applesauce
2 large eggs, at room temperature
1 t vanilla
Mix together and sprinkle over the mixture a combination of:
3/4 cup sweet white rice flour
1/4 cup potato starch
1/4 cup bean flour (I used chickpea)
1/4 cup cocoa powder
1 t baking powder
1 t xanthan gum
Stir just until blended and add:
1 cup chocolate chips or chunks
Pour into prepared dish and and spread evenly. Bake 25 to 30 minutes.Transfer to wire rack and let cool completely. Cut into 2" squares and serve. SO good!!
