These are going to become a staple in our house, for breakfast and for snacking. Yum...
Preheat oven to 350 degrees. Grease two opposite sides of an 8"square pan and line the base and other two sides with a sheet of parchment paper.
Combine:
2/3cup flaxmeal
1/2 cup brown rice flour
1/2 cup of almond flour or 1/3 cup whole almonds, ground to a fine meal in a spice or coffee grinder
1/3 cup tapioca flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon xanthan gum
1/2 teaspoon cinnamon
1/2 teaspoon ground allspice
1 teaspoon ground ginger
Pinch of fine sea salt
Beat together:
2 tablespoons of canola oil
6 tablespoons of molasses
2 tablespoons of brown sugar
3/4 cup milk
2 large eggs
Add this to flour mixture and beat to combine well.
Transfer the mixture to the pan.
Bake until it's shiny brown and starting to pull away from the sides, about 25 minutes.
Leave in the pan for 5 minutes.
Loosen the unlined sides with a knife and turn out onto a wire rack.
Peel off the paper and let cool completely.
Cut in half, then slice each half into 6 bars.
Enjoy!
