Rob's GF Pizza




Every weekend Rob makes this for us...it's delicious!







Pizza Crust

2 cups gluten free flour blend (ratio of 1 cup brown rice flour, 1 cup tapioca flour, 1 cup cornstarch and 1 Tbsp potato flour is what we usually have mixed up in a bin; sometimes we use 1/2 white and 1/2 brown rice flour)

2 teaspoons sugar
2 teaspoons xanthan gum
2 teaspoons active dry yeast
1/2 teaspoon salt
1 egg
1/2 teaspoon vinegar
2 tablespoons vegetable oil
1 cup very warm milk

Instructions


1) In a mixing bowl, combine dry ingredients. Preheat oven to 425 degrees.
2) Add egg,vinegar, oil and milk to dry ingredients and mix for 3 minutes on high speed using an electric mixer
3) Using a rubber spatula, spread dough evenly on a well greased cookie sheet or 14" round pizza pan
4) Let rise on top of a warm oven for 20 - 30 minutes
5) Bake crust at 425 degrees for 10 minutes.Top with pizza sauce (we mix with 1/3 cup salsa), and your choice of pizza toppings. We use a can of pineapple, a layer of Pillars GF pepperoni, fresh tomatoes and 2 cups grated Italiano cheese.
6) Bake at 425 for 15 minutes or until cheese bubbles
