
This one's for Katie....
(except for the mushrooms, and carrots, and so forth...)
1 tablespoon olive oil
1 tablespoon butter
10-15 mushrooms, sliced
1 stalk celery diced
1 carrot, diced
1 tomato, diced
1 large potato, diced
1 small onion, diced
6 cups chicken stock from boiling chicken bones (or 6 cups water and 2 McCormick's chicken bouillon cubes)
2 - 3 tablespoons rice
1/2 teaspoon thyme
2 pieces chicken, cubed (or 2 cups diced leftover chicken)
2-3 shakes of Tabasco sauce
salt and pepper as needed
1. Heat oil and butter in fairly large pot, on medium low, and stir in next 6 ingredients.
2. Put cover on and simmer on low for 20 minutes. Stir occasionally.
2. Add chicken broth and bring to low boil. Add rice and thyme.
3. Simmer on low for 15 minutes, without cover.
4. Add cut up chicken, Tabasco and seasonings.
5. Heat for a few minutes and serve!
